Breakfasts for POTS: Simple, Symptom-Friendly Mornings with Ruben Lespron, RD

If you live with POTS, you already know that mornings come with their own set of rules. Low energy, blood pressure swings, and brain fog can turn something as simple as making breakfast into a genuine challenge — and skipping the meal altogether often makes symptoms worse, not better.

That's exactly why we're hosting Breakfasts for POTS!, a hands-on cooking class designed specifically for our POTS and dysautonomia community.

Why Breakfast Matters (and Why It's Hard)

For many people managing POTS, mornings are the toughest part of the day. Blood pressure and heart rate can be at their most unpredictable right after waking, energy is often at its lowest, and brain fog can make even simple decisions — like what should I eat? — feel overwhelming. Add in the physical effort of standing at a stove or chopping ingredients, and it's easy to see why breakfast so often gets skipped.

But consistent, well-timed nutrition is one of the most practical tools we have for supporting symptom management. This class is built around that reality — not around the idea that you'll always have a great-energy morning.

What You'll Learn

In this session, Ruben Lespron, RD, will walk through 3 breakfast variations built from the same base ingredients, so you can prep smart without feeling like you're cooking three different meals. The variations include:

  • Make-ahead options you can prepare in advance for lower-energy mornings
  • No-cook options for days when standing at the stove just isn't in the cards

Walk Away With

  • Practical tips & kitchen shortcuts that reduce the effort of getting a meal on the table
  • Support for brain fog & decision fatigue, so breakfast stops being one more decision to make
  • Meals that work with your energy, not against it — built around real POTS mornings, not idealized ones
  • More confidence in the kitchen, even on symptomatic days

Designed for Our Community

This class isn't a generic cooking demo — it's built specifically for the realities of living with POTS. Whether you're newly diagnosed and still figuring out what works for you, or you've been managing symptoms for years and are looking for fresh ideas, this session meets you where you are.

We'd love to see you there. Come hungry for ideas — and maybe breakfast, too.
